What I've seen with the HP releases (the exception being POA) is that individual card prices are highest in the first four weeks or so after release, then taper off for a while until the supply dries up. The really rare cards will remain high. Your best prices for boxes and cases is with pre-orders before the set is released.
The difficult part of collecting a master set (every card) is not just the rare, pack-pulled cards, but some of the case incentives. They can sell for astronomical sums. You can see in the price guide how much it would cost to buy a Platform 9 3/4 ticket from Sorcerer's Stone and I don't remember the last time I saw a Pear Tree Leaves card from POA up for sale. The GOFU quad card is not a case incentive, but that one is going to be very rare and very expensive.
I can't collect master sets, so I have the cards I pull from my usual two boxes and then focus on a few cards I really want. It can take me many months to put together a small collection that includes a one to three each of autos, props, costumes, filmcards, and case loaders. Some people prefer to get mini-masters -- say, every prop or every costume -- or they focus on all of the cards for one particular character.
The OOTP movie will be released in July 2007, so the cards won't be out until June or so of that year. It's hard to say how well that set will do. Between now and then, we have GOFU, Memorable Moments, Chamber of Secrets, and possibly other smaller, limited edition sets like the new Poster Card Set. No one knows what all of those sets will do to the HP market.
