: RECIPES thread... YUM!
: grecopa October 10, 2005, 06:53:09 AM
Hey everyone!  I had a discussion a week or so ago with some of the UK people about what a biscuit is here in America, so I've decided to start a thread for all of us to exchange recipes.  I wanted to start with my Nana's biscuit recipe, but now I've lost my cookbook!  >:()  I'm sure it's in the kitchen somewhere, but in the meantime I'll start with one I know by heart.  It's a VERY easy cheese ball recipe that's quick and perfect to take to holiday parties!  :)

Holday Cheese Ball:
2 8oz. packages of cream cheese
1 8.5 oz can crushed pineapple
2 cups chopped pecans
1/4 cup chopped green pepper
2 tablespoons chopped onions
1 tablespoon seasoned salt (Lowry's, Mrs. Dash, or other)

Soften cream cheese, drain pineapple.  Stir in DRAINED crushed pineapple, 1 cup of the pecans, green pepper, onion, salt.  Chill well.  Form into a ball and roll in 1 cup pecans.  Garnish with parsley, cherries, pinapple slices.

I leave out the green peppers, I don't like them.

I have a really good taco casserole recipe that my sister gave me  ;D

Hot Taco Casserole

2 lb. Ground Beef (I use extra lean since my mom had her heart attack)
2 Tbsp. Taco Seasoning (I just put the whole packet in it tastes better to me that way)
1/3 tsp. pepper
1/2 tsp. salt
1/2 trp. Garlic Powder (or Garlic Salt, your choice)
1 Pint (Jar) Pizza Sauce
1 Pint Kidney Beans (Optional to me, it tastes just as good with or without this)
1 cup Sour Cream (again I use Fat Free for my mom and it tastes just as good)
1 Bag Tortilla Chips
3/4 lb. Shredded Cheese

Put the bag of crushed chips in the bottom of a medium roaster (cake pan). Mix Hamburger (cook hamburger first before adding the following stuff) then add the seasonings, pizza sauce and beans together. Spread mixture over the chips, then spread sour cream over the Hamburger mixture and then the cheese over the sour cream. Bake at 375* for 30 minutes. Serve with finally chopped lettuce, tomatoes and onions then put Taco sauce on top and your done. :)

I have another recipe that my family likes so I thougt I would share it also  ;D

Bar B-Q Sandwitch Recipe

1 lb. Ground Beef (we use extra lean :))
1 tsp. sugar (We use Splenda :))
1 Cup Ketchup
1 Onion, diced
1 Green Pepper, diced
1 tsp. vinegar
2 tsp. mustard
salt and pepper

Brown Beef then add the diced onion and green pepper, add some salt, pepper, and Garlic Powder (Don't go Crazy  :o) After the pepper and onion softens some add the rest of the ingredients, stir then add another teaspoon of sugar and stir again. Turn down heat on stove to low, cover pan with Foil and cook for about 15 minutes.

Wendi do you make the beef into little burgers or is it just sort of loose in the pan?

I think it should be loose, right Wendi?  Down here in the South we call those "Sloppy Joes".  A great meal for kids and grownups alike.  :)

When you say 'ketchup' do you mean tomato puree or something else?
Ketchup in the UK is normally a table condiment which is used as a accompaniment to fried food rather than a cooking ingredient ... it's usually tomato-based and has vinegar and spices and some other stuff in it and has a sharp acidic flavour ...
Thought I'd better ask before we reach for the Heinz Tomato Ketchup ...

The ketchup I use is Heinz Ketchup, the same thing we use to dip our french fries and eggs in  ;)

Ahhhhhhh right - thanks for clarifying that for me Wendi - I was quite worried that we were thinking of two completely different things there! ;)
